Carpaccio of musk ox fillet

Authentic free-range musk ox carpaccio from our continental farms. It is matured for three months and slowly cooked in aromatic herbs and spices, with this being the only treatment it has undergone. Serve with lemon and olive oil, slices of white truffle or parmesan, wild rocket leaves or a rich mayonnaise sauce.
